Stuffed Peppers

Ingredients

  • 8 large bell peppers, stemmed and cored
  • 1 onion, diced
  • 1/2 cup celery, chopped
  • 1/4 cup water
  • 2 cups tomato sauce (1 cup for topping)
  • 3 cups cooked brown rice
  • 1/4 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1/2 teaspoon basil

Instructions

  1. Cook onions, celery and mushrooms in water for about 15 minutes, until tender. Mix in 1 cup tomato sauce, rice, and seasonings. Pack mixture into prepared raw green peppers. Place in baking dish. Pour remaining 1 cup tomato sauce over peppers. Add 1 1/2 cups water to bottom of baking dish to prevent peppers from drying out. Cover and bake at 375° for 45 minutes. Uncover and bake for 15 minutes longer. Serves 8.
