Nine Bean Soup

Ingredients

  • 1/4 cup norhtern beans
  • 1/4 cup pinto beans
  • 1/4 cups large lima beans
  • 1/4 cup garbanzo beans
  • 1/4 cup kidney beans
  • 1/4 cup pink beans
  • 1/4 cup black beans
  • 1/4 cup navy beans
  • 1/4 cup small red beans
  • 1 large onion, chopped
  • juice of one lemon
  • 3 cloves garlic, minced
  • 1 large can tomatoes
  • 1/4 cup small red beans
  • 1/4 - 1/2 tsp. cayenne pepper
  • 2 Tbs. sea salt

Instructions

  1. Wash all beans and place in a large pot. Cover with water and 2 tablespoons sea salt. Soak overnight. (You may also use small amounts of lentils, split peas and barley.) Drain, add 2 quarts water, bring to a boil, then simmer slowly about 2 hours. Add chopped onion, cayenne, lemon juice, garlic and tomatoes. Cook for another 1/2 hour. Add sea salt to taste. If soup gets a little thick add more water.
