Lima Bean Soup

Ingredients

  • 2 pounds lima beans, cooked
  • 2 quarts water
  • 4 potatoes cut into chunks
  • 4 large carrots, sliced
  • 6 stalks celery, sliced
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 cans stewed tomatoes
  • 2 tsp. sea salt
  • 2 - 3 tsp. basil
  • 1 1/2 tsp. oregano

Instructions

  1. SauteĀ“ onion, garlic, parsley, potato, celery, carrot, and bell pepper in a soup pot (about 5 minutes). In a separate container mash some of the beans (about 1/2) with a potato masher. Add about 2 quarts water to sautĀ“d vegetables, and all of the seasonings. Cook until vegetables are almost done, then add zucchini, tomatoes, and all the beans (mashed and unmashed). Continue cooking until all vegetables are tender.
