Lentil Stew

Ingredients

  • 1 pound lentils (organic if available)
  • 6 cups water
  • 3 potatoes cut into chunks
  • 3 carrots, sliced 1/4 inch thick
  • 3 stalks celery, sliced
  • 2 bay leaves
  • 1 1/2 tsp. basil
  • 1 tsp. garlic powder
  • 1 tsp. sea salt

Instructions

  1. Place all ingredients in a saucepan, and bring to a boil. Reduce heat and simmer until lentils and vegetables are done. If mixture gets too thick while cooking, add some water, This is very filling, especially over rice or barley.
