Cream of Potato Soup

Ingredients

  • 5 lbs. potatoes, cooked, pealed, cubed
  • 2 onions, minced
  • 4 stalks celery, chopped
  • 2 carrots, shredded
  • 1 - 1 1/2 cups unbleached flour
  • 6 - 8 cups Original Rice Dream Milk
  • 2 tablespoons fresh parsley, minced
  • 1 teaspoon dill
  • sea salt to taste

Instructions

  1. Sauté onion, celery, carrot, and parsley until limp. Whisk in flour, then add about 2 cups milk, stirring constantly until thick. Continue stirring, adding the rest of the milk. Mixture should continue to thicken. Add potatoes, dill, and salt.
