Vegetable Fajitas

Ingredients

  • 1 onion cut in half, then sliced
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 - 2 zucchini, sliced
  • 3/4 carrot, shredded
  • 4 garlic cloves, minced
  • 3 - 4 Tbs. cilantro, minced
  • 1 - 2 cups Salsa, and black bean chili (from burrrito recipe but w/out the tortilla)
  • 1/2 tsp. sea salt
  • 1/4-1/2 tsp. cumin or Mexican seasoning
  • corn tortillas

Instructions

  1. SauteĀ“ onion, peppers, and garlic 5 minutes. Add Zucchini, carrots, cilantro, salsa, salt and seasoning. Cook vegetables until tender. Roll in steamed or lightly browned corn tortillas. Serve with beans and brown rice. Garnish with guacamole.
