Tofu-Spinach Enchiladas

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 - 1 cup mushrooms, sliced
  • 2 bunches fresh spinach, chopped
  • 1/2 tsp. sea salt
  • 1/2 tsp. garlic powder
  • 1 pound firm tofu
  • Enchilada Sauce
  • Cashew Pimiento Chese

Instructions

  1. SauteĀ“ garlic cloves and onions until onions are translucent. Add mushrooms, tofu and seasonings. Cook 1 minute, then remove from heat. Stir in spinach. Fill each tortilla with 3 tablespoons vegetable filling. Roll and put into baking pan. Cover with Enchilada Sauce, then top with Cashew Pimiento Chese spread. Bake at 350 degrees until aroma is irrestible, 20-30 minutes.
