Cashew Chow Mein

Ingredients

  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 2 cups mushrooms
  • 1 cup firm tofu, cubed
  • 3 cups cooked whole grain flat noodles (Udon noodles work well)
  • 1 cup cashews, rinsed and roasted
  • 2 tablespoons onion powder
  • 2 cups mushroom gravy
  • 2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 2 tablespoons honey

Instructions

  1. Sauté onion, celery and mushrooms in 3 tablespoons olive oil and 3 tablespoons water. Add tofu. Add remaining ingredients and pour into casserole dish. Bake for 25 minutes at 350°. Serve with brown rice.
