• 3 cups water
  • 1 1/2 teaspoons sea salt
  • 1 small potato, diced small
  • 1 cup polenta flour
  • 1 cup cold water


  1. Bring to a boil in large sauce pan first 3 ingredients. Gradually stir in a mixture of 1 cup cold water, 1 cup polenta. Continue boiling on medium heat stirring constantly until mixture thickens. Lower heat, cover, cook slowly for 10 minutes or more unto done. Stir a few times while cooking. Good plain or with your favorite sauce and vegetables on top or broiled the next day.
